Back at work for another week! At least at the end of this week I have the FBI2011 conference to look forward to! My weekend was lovely. I made CookSister’s lemon and prawn risotto – what an amazing recipe! It’ll get it’s own post…it was so good John’s requested we make it again as soon as possible!
On Saturday I went out to the cricket club and watched John play cricket. It was a lovely hot sunny day and so nice not to be tied to my books! We hada few drinks, I’ve discovered a new favourite summer drink; Pimms and Lemonade. So refreshing! We came home on Sat evening and had KFC for dinner. I’m such a bad influence! But it was soooo good! Especially when a little tipsy!
Sunday John wanted to go off for a bit of a hike looking for a spot to hide a geocache. I had to spend some time cuddling up to my books. Put in a good 2 hours and then flopped in from of the laptop watching Mad Men. It was stupidly hot here yesterday. Our poor little fan was working overtime! John made a fabulous mezze spread for dinner. A lovely peasant style bread; olive oil and balsamic for dunking, shaved cucumbers, several different types of cold meats, sun-dried tomatoes. So delicious and just what I felt like on such a hot day. Also, we don’t really observe/celebrate Valentine’s Day, so a lovely shared dinner was about as close as we get.
I also made an Easter Egg Pie. A first attempt. It turned out Ok. Perfectly edible…but next time (and yes, there will be a next time) I think I will combine the eggs with some cream cheese and maybe some extra choc-chips and bake that. So yummy!
Marshmallow Easter Egg Pie
Ingredients
Pre-made puff pastry, enough to line a shallow pie dish
10 – 12 marshmallow easter eggs.
- Easter Egg Pie
Blind bake the pastry for about 10 mins and then lay out the Easter Eggs in the pan.
- Ready for the oven
Bake at 180C for about 8 – 10mins or until the eggs have puffed up and melted together.
- Oh so sweet…but delicious!
John and I have managed to get through about 1/3 of this…but it’s great with some strong coffee!
That pie looks like pure SIN!
Oh it is! Totally! And I’m not even a little bit repentant!
You are going to be soooo popular with my daughter, can’t wait to make this pie!
